
When I started my new dietary program for Rheumatoid Arthritis the first thing I gave up was dairy. Dairy is a common inflammatory agent and should be avoided like the plague by those with autoimmunity. In fact, research suggests that as much as 60% of the world’s population can’t digest milk, and that lactose tolerance past infancy is abnormal rather than the other way around. Think about it, mammals are made to drink their own mother's milk, not the milk of other species, and even then, only for about the first two years of life.
And while I may never get over my longing for Taleggio cheese, and there is no known non-dairy replacement for this other-wordly creation, I have found a replacement for my beloved yogurt. So Delicious Coconut Milk Yogurt is absolutely divine, contains protein, fiber and B12, and live active cultures. I adore it. I use it in salad dressings and smoothies, but my favorite way to eat it (see photo of my snack this morning) is with fresh fruit and a smattering of nuts or seeds. A teensy drizzle of organic agave over the top and, voila! Heaven! Snack time perfection.

where do you get the Coconut Milk Yogurt
I purchase mine at Central Market, it's So Delicious brand. I love the plain, my kiddos prefer the raspberry or blueberry.
